The cold winter means a super late season for mid-Atlantic fruits and vegetables, but a few things are beginning to sprout up. Rhubarb is plentiful in our area, and Virginia’s strawberries are ripe and ready to go.
We’ll be supplementing those strawberries and rhubarb with late-season sweet potatoes and a few lucky apples that slept their winter away in storage just up the road in Pennsylvania. Our sweet potatoes and apples (sweet potato-apple pie, anyone?) were sourced straight from the Urbana Library Farmer’s Market last week, and we can’t wait to put them to good use!
